So maybe this one is a little lacking in creativity, but don't judge. I needed something quick, easy, and of course, the ever present criteria for my food choices: something for which I had the ingredients. And so...
No-bake cookies.
I followed my mom's recipe. She thinks it's lacking, but I thought it turned out fantastic! I used Coconut milk instead of regular and it turned out great. I also didn't have any wax paper, so I used a buttered cookie sheet and my ever-trusty Silpat to dry the cookies.
No-bake Cookies
2 c. sugar1/2 c. milk
1 stick butter
1/4 c. cocoa
1/2 c. peanut butter
3 c. quick oats
1/4 tsp. salt
1 tsp. vanilla
Bring sugar, milk, butter and cocoa to a boil . Boil for 1 1/2 minutes.
Remove from heat.
Remove from heat.
Quickly add peanut butter, oats and vanilla.
Tips: I found it helpful to have everything measured out beforehand as it is a pretty quick process. The cocoa mixture needs to be stirred to keep it from sticking. After scooping my cookie mixture onto the prepared surfaces I flattened them a bit to make them dry more round.

Thats exciting you are moving to Durham! I have never been but have heard good things about it. You will definitely love the weather. I have some friends who actually just moved away from Durham, but I could ask them for any tips they might have to pass along to you. I know they really loved it there.
Also, your son is adorable. :-)

thanks laura! i know. isn't polyvore great? one thing that would be great is if you could ask your friends where they lived? we have found a couple places that look good and have a friend in the area who offered to take a look at them for us, but any recommendations would be so fantastic! thanks for any help. :)
