Food | Meatloaf

Yea, getting all exotic with the meatloaf.

I’ve never made it until a few weeks ago because Cody hates ketchup. How do you make meatloaf without ketchup? I am here to tell you how, my friends. As with most of my culinary endeavors, I sort of threw this together.
I started with 2 lbs. of thawed ground beef, and sauteed 3 carrots and 1 onion, chopped. We mixed the hamburger, sauteed vegetables, breadcrumbs, 1 egg, and some milk. We chose to shape our meatloaf mixture into muffin sized mounds so that they would bake thoroughly in about 45 minutes. Our ratio of meat to vegetables was a bit off (read: excess veggies), but I really liked it that way.
The best part? No ketchup, so husband loved it.
Do you like meatloaf? I’m a huge fan of hamloaf with pineapple on top. Yum.

  1. The biggest "fight" Cody and I ever got in was over ketchup and meat. I was making hamburgers when we were in Florida and Cody walked into the kitchen as I was squirting ketchup into the bowl of raw meat (to make it more tender) and he FLIPPED OUT. He admitted at dinner, however, that he couldn't taste the ketchup, and that the burgers were delicious. Next time, sneak some in and see if he notices :)
