Food | No Bake Raspberry-Lemon Cheesecake

This is such a quick, easy, and delicious recipe. I whipped up a batch for Cody and myself, and it was such a treat (hence the less-than-attractive presentation). Don't worry, we didn't eat all six servings in one sitting.

I can't wait to revisit this recipe during the hot summer months. I'm thinking enormously pregnant me will appreciate such a simple, but decadent treat.

Two things: I doubled the graham cracker crumb crust, which I personally thought achieved a better crust to filling ratio. And second, I used frozen raspberries, and it worked just fine. You can also be more generous with those raspberries, which is always a no-fail option, in my opinion.
